How many butcher shops have you seen that have an open fire going, and are cooking a pot of meat, on an open lot, next to the business?  When you're visiting the small town of Gómez-Farías, check out Carniceria La Unica, and your eyes will be treated to that rather unusual sight.

Carniceria La Unica is owned by two brothers, Hector and Pablo, and they've owned and operated the business for many years, having inherited it from their parents.  La Unica, is a typical small, family-owned carniceria, or butcher shop, and they sell meat obtained from local sources.  I asked Hector what was cooking in the pot outside, and he replied, "chicharrónes," so I asked him for a half-kilo of them , as we had just left Gappy Bar, and were headed back into town for lunch, and a few chicharrónes sounded just like the thing to tide us over for lunch.

La Unica is low-tech, and basically has for sale whatever meat is available at the time.  I asked co-owner Paco what sort of meat that they had in stock, and he told me that they always have chicken, pork and tripe, but they sell other meat when it becomes available.  He pointed to a hand-lettered sign taped to the wall, which advertised the meat they were selling on the day of our visit.

We purchased a half-kilo of chicharrónes, or fried pork rinds, for the small price of MEX $15.00, which is a cheap snack for three hungry guys.  You know, when you see a butcher shop with a pot cooking next door over an open fire, you just have to patronize the store!
